Do I get to select the cuts I want with my order?

With any of our half or whole orders, you can select the cuts you want. Unfortunately, this is not available with our quarter or small box orders.

Are your cattle grass-finished or grain-finished?

Our cattle are grass-raised for the majority of their life; once they are close to the processing cycle of their life they are fed a grain and grass diet that has been developed by a nutritionist to make sure all their nutrient and vitamin needs are met and still allow for a nice grain-finished marbling in the meat.

How old is the animal?

The beef used for our program is born and raised in Campbell County, KY. The animals are harvested between 15 and 18 months of age – this is the optimal time to produce a well-finished animal with proper marbling.

What is marbling?

The term marbling refers to the white flecks of intramuscular fat in each cut of meat, which add a lot of flavor, juiciness, and tenderness.

Does your cost include processing?

The customer will not incur any processing fees. The price listed is for vacuum-sealed packages ready to eat or store in your freezer. Vacuum-sealed meat.

What does it mean to be USDA-inspected?

Federal Meat Inspection Act requires all meat sold commercially to be inspected and passed to ensure it is safe, wholesome, and properly labeled. The facility that processes our meat has a USDA Inspector present during the offloading, harvesting, and processing/packaging of the animal.

Do your animals receive any antibiotics or added growth hormones?

Our animals never receive any antibiotics or added growth hormones throughout their life. If we have an animal that needs a medical antibiotic treatment, it is treated and removed from our feeding program.
